Following many months of creation and development, we are proud to announce the arrival of our first very own cheese - Bright Blessed Crest!John Natlacen, who opened Churchmouse Cheeses in 2002, had always been asked by members of the public if he would ever create his own cheese and, indeed, that had been a lifelong dream. But the dream has literally now become a reality following many months of designing, creating, producing and maturing the cheese. Made by Maurice Walton and his small team at the Appleby Creamery, Cumbria, following John’s instructions, Bright Blessed Crest has a smooth velvet texture with a rich creaminess and a gentle “sheepiness”. Mild and slightly firmer when young, the cheese matures to a yielding, buttery paste when fully mature.
John enthuses, “I have always wanted to make my own cheese using excellent, local producers and quality milk, but up to now it has been just an idea.However, one night I literally dreamt of the cheese, what it would be made from and its name. Now my dream has become a very delicious reality and I am thrilled with the finished product”.
