This Northumbrian cheese, made at the Doddington Dairy, is rind washed in Newcastle Brown Ale, and is made in 1-2kg rectangular moulds. Once ripened, it is smooth and succulent, melting on the tongue with a tangy after taste from the ale. Fairly firm texture.
